Sushi Rice
Forgetting all the reasons and variations of Sushi Rice, we all have come to enjoy great sushi that allows the flavor of the sushi rather than the rice itself. Let's face it, we want to taste the Sushi not the rice. But good rice for sushi is absolutely a requirement. We prefer to dine at our favorite sushi restaurant but when we do make it ourselves, this recipe has never failed.
Ingredients
- 1/3 cp Rice Vinegar
- 2 tbsp Sugar
- 1 tsp Kosher Salt
- 3 cps Medium Grain Rice
- 3 1/4 cps Water
Instructions
- Combine Rice Vinegar. Sugar, and Salt in a small sauce pan. Cook over low heat until Sugar is completely dissolved. Cool.
- Rinse the Rice in a strainer under cold running water until it rinses clear of starch.
- Place Rice and Water in a sauce pan and soak for 1 hour. Cover the Rice and bring to a boil over high heat. Turn heat to very low and cook for 15 to 20 minutes or until water is almost gone.
- Remove from the heat and let steam for 10 to 15 minutes. Place Rice in a non-metallic bowl and sprinkle with Vinegar solution, folding it in with a wooden spoon.
- Do not smash the Rice and cool while folding
