Ingredients
  

  • 2 cps Warm Water No more than 110 degrees
  • 2 tsp Salt
  • 1 tbsp Extra Virgin Olive Oil
  • 2 tsp Dry Active Yeast 1 package
  • 4 cps High Protein Bread Flour 0|0 12% protein

Instructions
 

  • Combine Water, Salt, Olive Oil, and Yeast in a bowl. Rest for 5 minutes.
  • Combine the High Protein Flour with the water mixture until well incorporated. Rest covered for 30 minutes.
  • Stretch and fold each side slowly and rest covered for 30 minutes. Do this four times.
  • Remove the dough from the bowl and place on a cooking sheet that has been well oiled. Use olive oil very heavily. The dough craves olive oil. With your finger tips, dimple and stretch the dough to the sides and corners of the cooking sheet.
  • Oil the top of the dough very well and let sit for 1 hour.
  • Dimple and jiggle the dough making sure no sticking is occurring. If it sticks to the sheet, add oil to that spot. Add whatever toppings you like, and bake in a 4000 degree oven for 20-22 minutes and the top has turned golden brown.
  • We're looking for a crispy top and bottom with a fluffy inside. Let the Focaccia rest for 10 minutes before you serve.
