Braised Pork Belly

Ingredients
  

  • 1 ea White Onion slivered
  • 2 lbs Pork Belly cut into bite size pieces
  • 1 cp Vegetable Oil
  • 3 ea Green Onions cut into thirds
  • 1/2 cp Soy Sauce low sodium
  • 1/2 cp Sake
  • 1/2 cp Sugar
  • 4 ea Eggs boiled
  • 2 ea Garlic Cloves sliced in half
  • 3 ea Ginger slices about 1/8" thick
  • 2 ea Green Onions sliced

Instructions
 

  • In a container, add the soy sauce, sake, and sugar. Shake until sugar has disolved.
    Place the onions and then pork in a skillet and submerge with water. Bring to a boil and then simmer for a bout 1 and 1/2 to 2 hours or until tender but not falling apart.
    Remove the pork belly from the skillet and discard the onions.
    Heat a wok on high and add oil, green onions, ginger, and garlic. Let the aromatics flavor the oil until the green onions brown. Discard the aromatics. Place the pork belly into the wok and make sure to brown all sides. Remove the pork belly and set aside, and pour the oil into a pan. Add 3 tbsp of the oil back into the wok, along with the pork belly and the sauce. Cook on medium to low heat until reduced to a thick glaze.
    Serve over Japanese (short grain) rice, pouring the glaze on top and garnish with sliced green onions.
