Coctel de Camarones
Shrimp Cocktail Mexican style! Delicious, refreshing and packed full of flavor. Although a standard shrimp cocktail is tasty, the Mexican version is so much more fun to eat. Crunchy from the Cucumbers, onions and peppers but creamy from the Avocados and spicey from the Jalapeno Peppers. One of our most favorite dishes to devoure.
Ingredients
- 1/4 cp White Onion Fine Diced
- 3 Limes Juiced
- 1 lb Shrimp Medium, Deveined, and Tailed
- 2 ea Roma Tomatoes Diced
- 1 Cucumber Diced, and Seeded
- 2 ea Jalapeno Peppers Fine Diced
- 1 1/2 cps Clamato Juice
- 1 cp Ketchup
- 2 tsps Valentina Hot Sauce
- 1 ea Cilantro Stemmed, and Finely minced
- 2 ea Avocados Ripe, and Diced
- Salt and Pepper
Instructions
- In a small bowl, mix the White Onion with the Lime Juice. Let stand for at least 10 minutes.
- In a separate large bowl, and the Shrimp, Tomatoes, Cucumber, Jalapenos, Salt and Pepper and mix gently to combined.
- Add more Jalapenos for a spicer Coctel.
- To the Onions and Lime mixture, add the Clamato Juice, Ketchup, and Valentia Hot Sauce. Stir to combined.
- Add both mixtures together in the large bowl and stir to combined.
- Add the Avocados and stir gently to combined.
- You can add the Avocado as a topping instead if desired.
- Cover and chill for at least an hour.
